1. Combine the broccoli, potatoes, egg, cilantro, garlic powder, thyme, and quinoa. Season with salt and pepper to taste.
2. Form the vegetable mixture into small balls, about 2-3 tablespoons then flatten them to make patties. Place the patties in the Air Fryer basket in a single layer. Do not stack, just cook in batches if needed.
3. Cook in the Air Fryer that is set to 400 F (200 C) for 15-20 minutes or until golden brown.
4. Transfer into a serving dish and serve with your favorite dipping sauce.
