Quinoa and Spinach Cakes

Ingredients

  • 2 cups (340 g) quinoa, cooked

  • 1 cup (30 g) spinach, chopped

  • 1 (60 g) large egg

  • 2 tablespoons (7 g) parsley, minced

  • 1 teaspoon (3 g) garlic, minced

  • 1/2 cup (55 g) carrot, peeled and shredded

  • 1/2 cup (80 g) onion, chopped

  • 1/4 cup (60 ml) skim milk

  • 1/4 cup (15 g) grated parmesan cheese

  • 1 cup (100 g) breadcrumbs

  • sea salt and freshly ground black pepper

Method

  • 1. In a large mixing bowl, combine together all the ingredients. Season with salt and pepper to taste.
  • 2. Preheat your Air Fryer to 380 F (190 C).
  • 3. Scoop ¼ cup of quinoa and spinach mixture and place in Air Fryer cooking basket. Cook in batches for about 10 minutes or until golden brown.
  • 4. Serve and enjoy.
