Minced Meat Casserole with Cheddar

Ingredients

  • 2 tablespoons (30 ml) olive oil

  • 1 cup (160 g) onion, chopped

  • 3 (3 g) clove garlic, crushed

  • 1 lb. (450 g) lean ground beef

  • 2 cups (500 g) tomato sauce

  • 1 medium (60 g) carrot, chopped

  • 2 cups (370 g) cooked rice

  • 1 (60 g) celery stalk, diced

  • 1/2 cup (60 g) cheddar cheese, grated

  • 1/2 cup (60 g) mozzarella cheese, shredded

  • 2 tablespoons (15 g) Parmesan cheese, grated

  • 1/4 cup (15 g) fresh parsley, chopped

  • salt and freshly ground black pepper

Method

  • 1. Heat oil in a large pan over moderate flame. Stir-fry chopped onion and garlic for 3 to 5 minutes.
  • 2. Add the ground beef and cook for about 7-10 minutes, stirring occasionally until browned. Reduce heat to low.
  • 3. Add the tomato sauce, carrot, rice, celery. Cook, stirring frequently for 10 minutes. Season with salt and pepper to taste.
  • 4. Transfer to a baking dish that can fit inside your air fryer basket.
  • 5. Sprinkle with cheddar, mozzarella, and parmesan cheese. Cook in the air fryer for 15 minutes at 200 C (400 F). Cool slightly. Garnish with chopped parsley.
  • 6. Serve and enjoy.
