Chili Roasted Eggplant Soba

Ingredients

  • 2 (200 g) eggplants

  • Kosher salt and freshly ground black pepper

  • Noodles:

  • 8 oz. (250 g) soba noodles

  • 1 cup (150 g) button mushrooms, sliced

  • 2 tablespoons (30 ml) peanut oil

  • 2 tablespoons (30 ml) light soy sauce

  • 1 tablespoon (15 ml) rice vinegar

  • 2 tablespoons (7 g) cilantro, chopped

  • 2 (3 g) red chili pepper, chopped

  • 1 teaspoon (5 ml) sesame oil

Method

  • 1. In a mixing bowl, mix together ingredients for the marinade.
  • 2. Wash eggplants and then slice into ¼-inch thick cuts. Season with salt and pepper, to taste.
  • 3. Preheat your Air Fryer to 380 F (190 C).
  • 4. Place eggplants in the Air Fryer cooking basket. Cook for 10 minutes.
  • 5. Meanwhile, cook soba noodles according to packaging directions. Drain the noodles.
  • 6. In a large mixing bowl, combine the peanut oil, soy sauce, rice vinegar, cilantro, chili, and sesame oil. Mix well.
  • 7. Add the cooked soba noodles, mushrooms, and roasted eggplants; toss to coat.
  • 8. Transfer mixture in the Air Fryer cooking basket. Cook for another 5-7 minutes.
  • 9. Serve and enjoy.
