Herbed Sweet Potato Hash

Ingredients

  • 4 (200 g) sweet potatoes, peeled and diced

  • 1 cup (150 g) button mushrooms, sliced

  • 1/2 cup (80 g) onion, chopped

  • 1/2 cup (45 g) green bell pepper, chopped

  • 2 tablespoons (30 ml) lemon juice

  • 2 tablespoons (30 ml) olive oil

  • 1/2 teaspoon (1 g) dried thyme

  • 1/2 teaspoon (1 g) dried rosemary

  • salt and pepper, to taste

Method

  • 1. Preheat Air Fryer to 360 F (180 C).
  • 2. In a mixing bowl, mix together all ingredients. Season with salt and pepper.
  • 3. Transfer potato mixture into a casserole dish that can fit into the size of the Air Fryer cooking basket.
  • 4. Cook for about 25-30 minutes.
  • 5. Serve and enjoy.
