Air Fried Jerk Chicken Drumstick

Ingredients

  • 8 chicken drumsticks

  • 1/4 cup (60 ml) olive oil

  • 1/4 cup (60 ml) fresh lime juice

  • 2 tablespoons (30 ml) soy sauce

  • 2 (40 g) shallots (quartered)

  • 4 (3 g) cloves garlic

  • 3 Scotch bonnet or habanero chili (stemmed and seeded)

  • 1 tablespoon (15 g) brown sugar

  • 1 tablespoon (2.5 g) fresh thyme leaves

  • 1/2 teaspoon (1 g) nutmeg (freshly grated)

  • 1/2 teaspoon (1 g) allspice (ground)

  • 1/2 teaspoon (1 g) cinnamon (ground)

  • 1/4 teaspoon (1.5 g) salt

  • 1/4 teaspoon black pepper (ground)

Method

  • 1. Whisk together the olive oil, lime juice, soy sauce, shallots, garlic, chili, brown sugar, and thyme in a food processor. Process until smooth.
  • 2. Add the nutmeg, all spice cinnamon, salt and pepper. Pulse 2-3 times. Transfer mixture into a medium non-reactive bowl.
  • 3. Add chicken drumsticks and toss to coat. Cover and refrigerate for 2 hours.
  • 4. Preheat your Air Fryer to 400 F (200 C).
  • 5. Place chicken into the Air Fryer basket. Cook for 8-10 minutes on each side.
  • 6. Place in a serving dish.
  • 7. Serve and enjoy.
