Method
1. Cut each zucchini in half lengthwise. Using a spoon or melon baller, scoop out the flesh in the middle of the zucchini to resemble a boat. Chop the flesh that has been removed and set aside.
2. Heat oil in a large skillet over medium flame. Stir-fry onion and garlic for 3-4 minutes.
3. Add the minced beef and cook for 7 minutes, stirring often until browned.
4. Add the tomatoes, chopped zucchini, tomato paste, and basil. Cover with lid and cook for about 15 minutes, stirring once in a while. Season with salt and pepper to taste. Turn off the heat.
5. Divide mixture equally into the zucchini boats.
6. Combine the breadcrumbs and cheese in a small bowl. Spoon over meat.
6. Preheat your Air Fryer to 400 F (200 C).
7. Place the prepared zucchini boats in the Air Fryer basket. Cook for 15 minutes. Cook in batches if needed.
